Filling:

How To Make 7 Up Salad

Make the Jello Layer:
- Drain the pineapple, saving the juice.
- Dissolve the Jello in boiling water, then stir in the 7UP.
- Add pineapple and marshmallows, pour into a 9 by 13-inch pan, and chill until set (about two hours).

Make the Pineapple Custard:
- Mix sugar, flour, egg, and pineapple juice in a saucepan.
- Heat and whisk until thickened, then stir in butter to melt. Transfer to a bowl to cool.
- Fold in Cool Whip for a creamy custard.

Assemble and Chill:
- Spread the custard over the Jello layer.
- Top with Cool Whip.

Can I substitute the Cool Whip?
You can try using homemade whipped cream instead of Cool Whip. However, it may not hold well, so you should serve the dish immediately.
Can I use a different flavor of Jello?
I prefer lime Jello, but you could substitute lemon or another citrus Jello, and it will still have a delicious tangy citrus flavor. Just note that it will alter the overall flavor slightly.
Do I need to grease the pan?
You do not need to grease the pan because the Jello will set in it and not stick to it.

7 Up Jello Salad

Ingredients
FILLING:
- 20 ounce can crushed pineapple, drained well, reserve juice
- 6 ounce lime Jello gelatin
- 2 cups boiling water
- 2 cups 7up soda
- 1 cup mini marshmallows
PINEAPPLE CUSTARD:
- ½ cup granulated sugar
- 3 Tablespoons all-purpose flour
- 1 large egg, slightly beaten
- Pineapple juice from reserve
- 2 Tablespoons unsalted butter
- 1 cup Cool Whip
TOPPING:
- 2 cups Cool Whip
- 2 Tablespoons chopped pecans
- Maraschino cherries, optional
Instructions
MAKE THE FILLING:
- Drain the pineapple and reserve the juice.
- In a large bowl, combine gelatin and boiling water.
- Stir until completely dissolved, about 2 minutes.
- Add lemon-lime soda and stir until well combined.
- Stir in pineapple and marshmallows.
- Pour the mixture into a 13×9-inch pan.
- Chill in the refrigerator until completely set, about 2 hours.
- While the Jello is setting, you can prepare the topping.
MAKE THE PINEAPPLE CUSTARD:
- Add sugar, flour, beaten egg, and pineapple juice in a small saucepan.
- Whisk constantly over medium heat until thickened.
- Add butter and stir until melted.
- Remove from the heat and transfer to a mixing bowl. Allow the custard to cool for about 30 minutes.
- Fold in whipping topping until the mixture is creamy and combined.
ASSEMBLE AND CHILL:
- Spread the pineapple custard evenly over the set gelatin filling.
- Spread 2 cups of Cool Whip over the top.
- Return to the refrigerator until ready to serve.
- Sprinkle with chopped pecans.
- Serve with maraschino cherries, if you like, for a festive touch.
