7 Up Jello Salad

Ingredients

FILLING:

  • 20 ounce can crushed pineapple drained well, reserve juice
  • 6 ounce lime Jello gelatin
  • 2 cups boiling water
  • 2 cups 7up soda
  • 1 cup mini marshmallows

PINEAPPLE CUSTARD:

  • ½ cup granulated sugar
  • 3 Tablespoons all-purpose flour
  • 1 large egg slightly beaten
  • Pineapple juice from reserve
  • 2 Tablespoons unsalted butter
  • 1 cup Cool Whip

TOPPING:

  • 2 cups Cool Whip
  • 2 Tablespoons chopped pecans
  • Maraschino cherries optional

Instructions

MAKE THE FILLING:

  • Drain the pineapple and reserve the juice.
  • In a large bowl, combine gelatin and boiling water.
  • Stir until completely dissolved, about 2 minutes.
  • Add lemon-lime soda and stir until well combined.
  • Stir in pineapple and marshmallows.
  • Pour the mixture into a 13x9-inch pan.
  • Chill in the refrigerator until completely set, about 2 hours.
  • While the Jello is setting, you can prepare the topping.

MAKE THE PINEAPPLE CUSTARD:

  • Add sugar, flour, beaten egg, and pineapple juice in a small saucepan.
  • Whisk constantly over medium heat until thickened.
  • Add butter and stir until melted.
  • Remove from the heat and transfer to a mixing bowl. Allow the custard to cool for about 30 minutes.
  • Fold in whipping topping until the mixture is creamy and combined.

ASSEMBLE AND CHILL:

  • Spread the pineapple custard evenly over the set gelatin filling.
  • Spread 2 cups of Cool Whip over the top.
  • Return to the refrigerator until ready to serve.
  • Sprinkle with chopped pecans.
  • Serve with maraschino cherries, if you like, for a festive touch.
