FILLING:
- 20 ounce can crushed pineapple drained well, reserve juice
- 6 ounce lime Jello gelatin
- 2 cups boiling water
- 2 cups 7up soda
- 1 cup mini marshmallows
PINEAPPLE CUSTARD:
- ½ cup granulated sugar
- 3 Tablespoons all-purpose flour
- 1 large egg slightly beaten
- Pineapple juice from reserve
- 2 Tablespoons unsalted butter
- 1 cup Cool Whip
TOPPING:
- 2 cups Cool Whip
- 2 Tablespoons chopped pecans
- Maraschino cherries optional
MAKE THE FILLING:
Drain the pineapple and reserve the juice.
In a large bowl, combine gelatin and boiling water.
Stir until completely dissolved, about 2 minutes.
Add lemon-lime soda and stir until well combined.
Stir in pineapple and marshmallows.
Pour the mixture into a 13x9-inch pan.
Chill in the refrigerator until completely set, about 2 hours.
While the Jello is setting, you can prepare the topping.
MAKE THE PINEAPPLE CUSTARD:
Add sugar, flour, beaten egg, and pineapple juice in a small saucepan.
Whisk constantly over medium heat until thickened.
Add butter and stir until melted.
Remove from the heat and transfer to a mixing bowl. Allow the custard to cool for about 30 minutes.
Fold in whipping topping until the mixture is creamy and combined.
ASSEMBLE AND CHILL:
Spread the pineapple custard evenly over the set gelatin filling.
Spread 2 cups of Cool Whip over the top.
Return to the refrigerator until ready to serve.
Sprinkle with chopped pecans.
Serve with maraschino cherries, if you like, for a festive touch.
