Smoked Sausage and Potatoes

Ingredients

  • 2 lbs smoked sausage sliced into ½-inch rounds
  • 1 ½ lbs baby potatoes halved
  • 1 large red bell pepper sliced
  • 1 large yellow bell pepper sliced
  • 1 large red onion sliced
  • 3 Tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Fresh parsley chopped (for garnish)

Instructions

PREP OVEN AND PAN:

  • Move the oven rack to the middle position.
  • Preheat your oven to 400°F (200°C).
  • Line a rimmed baking sheet with foil.

PREP VEGETABLES AND SAUSAGE:

  • Combine the sliced potatoes, bell peppers, and onion in a large mixing bowl.
  • Drizzle with olive oil and toss to coat.
  • Sprinkle the garlic powder, smoked paprika, dried thyme, salt, and black pepper over the vegetables.
  • Toss again to distribute the seasonings evenly.

ARRANGE ON A SHEET PAN:

  • Spread the seasoned vegetables evenly on a large sheet pan.
  • Add the sliced smoked sausage on top of the vegetables. As the sausage cooks, the juices drip on the vegetables, seasoning them even more.

BAKE:

  • Place the sheet pan in the oven and bake for 40-45 minutes until the potatoes are tender and the sausage is slightly crispy around the edges.
  • Stir halfway through cooking to ensure even roasting.

GARNISH AND SERVE:

  • Remove from the oven and garnish with freshly chopped parsley. Serve hot and enjoy!
