- 2 lbs smoked sausage sliced into ½-inch rounds
- 1 ½ lbs baby potatoes halved
- 1 large red bell pepper sliced
- 1 large yellow bell pepper sliced
- 1 large red onion sliced
- 3 Tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- ½ teaspoon salt
- ½ teaspoon black pepper
- Fresh parsley chopped (for garnish)
PREP OVEN AND PAN:
Move the oven rack to the middle position.
Preheat your oven to 400°F (200°C).
Line a rimmed baking sheet with foil.
PREP VEGETABLES AND SAUSAGE:
Combine the sliced potatoes, bell peppers, and onion in a large mixing bowl.
Drizzle with olive oil and toss to coat.
Sprinkle the garlic powder, smoked paprika, dried thyme, salt, and black pepper over the vegetables.
Toss again to distribute the seasonings evenly.
ARRANGE ON A SHEET PAN:
Spread the seasoned vegetables evenly on a large sheet pan.
Add the sliced smoked sausage on top of the vegetables. As the sausage cooks, the juices drip on the vegetables, seasoning them even more.
