- 4 medium dill pickles diced
- ½ cup red onion diced
- 1 medium red pepper diced
- 1 English cucumber diced
- 2 Roma tomatoes diced
- 1 jalapeno deseeded and diced
- 1 clove garlic minced
- ¼ cup pickle brine
- 1 Tablespoon white vinegar
- 2 limes zest
- 2 limes juiced
- 1 Tablespoon fresh dill chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
Combine all ingredients into a large bowl and mix together.
Cover the bowl with plastic wrap and chill in the refrigerator for 3 hours or overnight.
Once chilled serve and enjoy with chips or on top of hot dogs!
