Ready in 15 minutes, these black beans are perfect for tacos, bowls, quesadillas, or a protein-packed side dish that tastes just like the black beans at Cafe Rio.
Add the cumin, minced garlic, and olive oil into a cooking pot and cook on medium heat for 1 minute.
Add the black beans, tomato juice, salt and pepper and baking soda and cook down for 5 minutes. Adding the baking soda will keep the vibrant color of the black beans.
GARNISH, AND SERVE:
Stir in the chopped cilantro.
Serve.
